Whole nuts with skins can be sold directly but often go on to undergo skinning, the stage at which the tegument (the brown outer skin) is removed using a blanching process. At this stage the most sophisticated technology is used to remove imperfect almonds and hazelnuts and to ensure that the nuts preserve their organoleptic properties. It is important to monitor the level of humidity of the whole nuts, which must not exceed 6%.
The whole nuts are cleaned again and impurities are removed. From this moment the almonds and hazelnuts are already ready for direct sale, or to continue being processed if they are intended for specially prepared products. During each step of the production process we closely monitor the temperature, time and humidity in order to preserve the taste, texture and natural colour of the almonds and our experienced staff make sure that the natural quality of the products is maintained at all times during the entire process.
